Pinto Bean Muffins

2 eggs
1 c. milk
1 c. mashed; cooked pinto beans
4 T. melted shortening
1 t. salt
2 c. flour
1/2 c . brown sugar
2 t. baking powder

Mix dry ingredients. Beat eggs. Mix with milk and mashed beans. Add melted shortening and mix just enough to moisten dry ingredients. Fill muffin tins 1/2 full and bake at 400 degrees for 20-25 min. Serve hot with butter.
